
Plum mustard - the delicate one
Our plum mustard is something very special!
The production of this savory treat is tedious and takes place in several stages.
At the beginning there are of course our plums, unsprayed, untreated, self-picked and pitted. Then the plums are cut and placed in Medronho schnapps. Medronhos are the fruits of the strawberry tree, which we also harvest ourselves and exclusively from the trees of our land and after a fermentation time of about 4 months let them burn in a distillery. Incidentally, this schnapps is extremely popular and expensive. But back to our plums ... The fruits are steeped in schnapps for at least three months, after which the alcohol is poured off (plum liqueur, by the way ...) and the plums are reduced over a low flame for about 24 hours. The amount is reduced to less than half. Result: our plum jam, which in and of itself is a delight.
As is well known, there are also people who love hearty foods - that's why we use part of the plum jam to produce a very delicate mustard that tastes great not only with meat and sausages, but also with cheese.
